My food story…
I am one of four, so by the time I was off to Nursery my Mum was busy dealing with 3 older and more demanding siblings, so it was up to me to make my ketchup and cheese sandwiches. A classic combo right? Growing up we had the classics: spag bol, suasages + mash, mac + cheese with my Mum firmly as head chef in our household. I always enjoyed cooking and being creative in the kitchen when I was younger, but it wasn't something I really started love until I left home.
When I went off to Uni I began to see the beauty in making amazing veggie food, which made the switch a no brainer. The reason behind going veggie is because I love animals so much, it is better for my digestion and I have always loved vegetarian food (especially when I realised there was more too it than cheese and ketchup sanies)! For me, the fact that it is better for the environment is an amazing added bonus.
For me, cooking is a way to unwind, it’s something that gets me thinking creatively and it’s a way in which I look after my body. I am not the best at keeping to a recipe and much prefer chucking things together. Something I have taken from my upbringing is simplicity, and it really is at the heart of my cooking. When things get overly complicated and stressful it loses the appeal. I get bored easily so try to mix it up as much as possible. Except for aubergines, I alwaayyyss have aubergines.

I love Lebanese food, Mexican food and Greek food. Some of my fave ingredients to use are tomatoes, feta, spring onions, nuts and grains and lemons, oh and I am a little bit obsessed with Olive Oil. It goes with everything! I love Ottolenghi, Nigel Slater and Athena Calderone, and some insta pages which I follow for fab food are @feedtheswimmers @howsweeteats @kin_cafe @dianemorrisey. But mostly I am inspired by market stools with fresh veg and herbs.

My recipes are just another way for me to share my holistic lifestyle with you all and I hope that they inspire you to make something yummy for your friends and fam.
I will be adding new recipes every couple of months, things that come to me and combos that I think you guys will all love too. To launch, I have shared my honey glazed aubergine, tomato bulgur wheat and lemony butternut lentils. Hope you enjoy!
